Chunky Guacamole

In late 2013 when I decided to follow an alkaline lifestyle, I realised the benefits of avocado to my health. I may no longer be on that alkaline train but I continue to eat avocados all the time. I believe my love for them comes from weekends spent at my Grandparents house in Waterloo, Freetown when my Grandma used to always make us some “butter pear” aka avocado in a buttered bread roll. This was the yummiest meal and oh so simple. These days, I rarely eat bread so I have to come up with alternative ways of consuming this lovely fruit.
Avocados are good for your hair, skin and nails as they are rich in B Vitamins and lots of other nutrients such as Folate and Potassium.
Guacomole is a Mexican dip made from avocados. It is often added to burritos. Here’s how I made mine:

Cut avocado in half lengthways around the stone and twist both ends to separate. With a spoon, scoop out the meat of the avocado and mash in a bowl. I like my Guacomole a little chunky so I don’t use a masher. Chop the scotch bonnet, onion and tomato and add to mashed avocado. Squeeze in the lime and add salt and black pepper to taste.
This was really tasty but I realised the onion was too sharp with the avocado so next time I will use spring onions, scallions, instead.
