Kale, Avocado & Cucumber Salad

Well hello jewels. Truly my health journey has been wack so trust and believe I did not want to hear anybody's mouth about why I wasn't eating like I normally would. The reasons are plenty and perhaps I will enlighten you all in the journal one of these days.
Anyway, here I am on my journey again, hoping to find balance between nourishment and flavour through healthy eating. This simple nutrient-rich recipe is one I concocted rich in Vitamin A, C and K from the kale, creaminess and good fats from the avocado, with a cool hydration crunch from the cucumber.
Ingredients
For Salad
100g Cavolo Nero kale, stems removed, leaves chopped
1 cucumber, diced
1 handful fresh coriander, chopped
1 small red onion, thinly sliced
1 avocado, diced
For Dressing
To Garnish
1 tbsp sunflower seeds or pumpkin seeds
Instructions
Wash: Wash your hands properly because those leaves need to be massaged. Wash all your vegetables properly with some salt.
Prepare the kale: Place the chopped kale in a large bowl. Add a drizzle of olive oil and a pinch of salt. Massage the kale with your hands for 1–2 minutes until it softens.
Combine the vegetables: Add the cucumber, coriander, avocado (fruit I know) and red onion to the bowl with the kale. Toss to mix.
Make the dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt and pepper. Adjust seasoning to taste.
Dress the salad: Pour the dressing over the salad and toss well to coat.
Add garnish: Sprinkle sunflower or pumpkin seeds on top for added texture, if desired.
Serve: Enjoy immediately as a light meal or side dish.

I dreamt of having this with some chicken wings tonight but I was too hungry to wait for my emergency Morrisons delivery from Amazon, so I opted to go vegetarian tonight and have it with some olive sourdough from Co-Op. I was more than satisfied. Hope you enjoy it when you try it too.
